This is an amazingly simple recipe for an incredibly moist and tasty version of the traditional bread pudding. Simply perfect accompanied by a cup of English breakfast tea in the afternoon.

Ingredients:
- 2 cups leftover bread, torn or cut into bite-size pieces (We used homemade sourdough poppy seed bread.)
- 8 ounces mascarpone
- 2 whole organic, free-range eggs, large
- 1 cup whipping cream, organic
- 1/4 cup granulated maple syrup (or Merchant Spice Co.’s Maple Seasoned Sugar)
- 1/4 cup ground hazelnuts
- 1 tablespoon cane sugar
- 1 tablespoon poppy seeds, lightly ground (or left whole, at your preference)
- 1 tablespoon pure maple syrup
- 1 tablespoon extra virgin olive oil, the most buttery flavored olive oil you have on hand (NOTE: We use olive oil in place of butter for a healthier, lighter alternative, without sacrificing any of the delicious flavor.)
- 1 tablespoon all-purpose flour, organic
- 2 teaspoons tapioca flour
- 1 teaspoon freshly grated nutmeg
- 1/2 teaspoon ground vanilla, optional
- 6-8 drops vanilla oleoresin, optional
- 1 tablespoon vanilla extract, if not using ground vanilla or vanilla oleoresin (NOTE: This dish is worthy of the finest quality vanilla extract you can purchase. Better yet, you can steep whole vanilla bean pods, cut down the center and seeds removed, in brandy and have this kitchen staple on hand at all times.)
- A pinch of finely ground sea salt, which will ‘pique’ the flavor of your other ingredients
Preparation:
Preheat your oven to 450° Farenheit.
Cream the mascarpone with the sugar (granulated maple sugar and cane sugar). Then combine this mixture with the remaining wet ingredients. Next, stir in the dry ingredients, using a wooden spoon, preferably. Now, pour this mixture over your leftover bread, mixing gently to combine. Place the pudding in a lightly greased casserole dish, dusted with flour, and bake uncovered for 25 to 30 minutes, until golden brown.
This pudding is scrumptiously moist and delightful served warm or cold. Simply scoop a portion onto your plate and enjoy with a nice cup of hot tea.
